As a true coffee aficionado, a visit to Yogyakarta is incomplete without savoring its signature coffee. In this cultural hub, you can not only indulge in a delightful cup of coffee at trendy cafes but also embark on an adventure to seek out the finest roasted beans from master roasters. As a foreign tourist, I was not only interested in visiting cafes and hanging out to enjoy the served coffee, but I was also curious to learn more about some of the famous coffee roasteries in this city.
Fortunately, my guide, Mas Sontor,
who hails from Bantul (a small town south of Yogyakarta), was
willing to take me to these places to satisfy my curiosity.
Don't imagine the coffee here
is the same as the coffee in European cities or in my hometown in the Netherlands,
which is famous for its milky coffee. Yogyakarta offers a richer coffee
flavor adventure, in terms of taste, aroma, and nuances. Here, you can find
various types of local coffee with unique flavor profiles, from robust robusta
to smooth arabica, and served in a variety of ways.
What is coffee roasting?
Before we explore the
roasters in this Student City, let's first understand what coffee roasting is.
Simply put, coffee roasting is the process of heating raw coffee beans until
they change color and release their distinctive aroma and flavor.
There are three main stages in coffee roasting:
- Drying: Raw coffee beans with a water content
of around 12% are first dried. At this stage, the temperature must be carefully
controlled to prevent the coffee beans from burning.
- Browning: The coffee beans start to turn brown
and release their aroma. At this stage, the roasting process is slowed down so
that the coffee's flavor and aroma can fully develop.
- Development: The coffee beans mature and release
their best flavor and aroma. At this stage, the roasting process is slowed down
again to avoid bitterness and burning.
After going through these three stages, the coffee
beans are cooled and ready to be packaged or sold. There
are various levels of coffee roasting, from light to dark, which produce
different flavors.

telling you about the famous coffee roasteries in Yogyakarta. According to Mas Sontor,
my guide, there are many coffee roasteries in Yogyakarta, but these are the
only 5 places that I had the opportunity to visit in a very limited time.
